Cauliflower steaks are a vegan recipe you can get behind!
This has got to be one of the best vegan recipes with cauliflower that exists on the internet…full stop. Plus turning cauliflower into steaks is easily one of the best ways to make fundamentalist meat eaters blush. Plus cauliflower is so delicious and good for you, it is something you want on your plate as often as possible. It is one of those veges that makes itself the main show.
1 big tasty cauliflower
Half a teaspoon of smoked paprika
1 teaspoon of capers
A drizzle of red wine vinegar
2 tablespoons of flaked almonds (toasted)
2 tablespoons of the best olive oil you have
1 large red pepper
4 pitted black (or mixed) olives
A small handful of fresh parsley
Pre-heat oven to 220C and prepare a baking tray (baking parchment or oil if preferred).
Take your cauliflower and slice the middle section into steaks that are one inch thick. You can save the rest for another dish. They can also be used as steaks, but bigger and thicker is better. Give the steaks a rub of paprika and the olive oil. Chuck into the oven for 20 minutes.
To make the salsa, chop up the olives, capers and red peppers and put into a bowl. Drizzle in the olive oil and vinegar and season to taste – easy! Spoon over the steaks, drizzle with a little more oil, and sprinkle with parsley and almonds.
