Vegans Scramble for Chickpeas – a vegan recipe
This vegan recipe with chickpea is a favorite at Somos Veganos because it is simple, tasty, and full of chickpea goodness. Of course, as it has chickpeas this is a great way to get protein, but with so many additional options available (think super seeds), it really is a vegan dish you can do so much with. A perfect breakfast, but really something you can have any time of the day. So how do you make it?
A healthy tablespoon of coconut oil
Around half a white onion, sliced as thinly as you can
4 minced cloves of garlic (or more if you love it)
1 can of good quality chickpeas
2 tablespoons of quality nutritional yeast
1/2 lemon juiced (keep the rest for a bit of vest and prettiness as wanted)
1 level teaspoon of turmeric
Salt to your taste (around half a teaspoon recommended)
three leaves of Swiss Chard (but you can experiment with other leaves like spinach)
There are loads of extra yum and health things you can top this off with – Avocado, Flax Seed, or whatever you want really. Think seeds, fruit and oils.
Heat up oil in a pan. When ready to rock, throw in the onions and garlic and sauté for about six minutes until onions are starting to look tasty. As the onions cook chuck the chickpeas in a bowl with yeast, adding the lemon juice, turmeric, and the salt (but remember never get carried away here, you can always add more later). Give it a good stir making things partially mashed.
Then just simply transfer your mash to the pan and heat for four minutes. Stir in the Swiss Chard or whatever leaf you have chosen until the leaves become soft and wilted. Serve. Easy, healthy and yum!
