Everyone loves a bit of Cajun!
Doesn’t everyone love Cajun? Well we at Somos Veganos do. In fact this is one of our favorite vegan recipes with kidney beans. If you love that warming Cajun vegan yum, then this is the dish for you. Plus it is packed with fibre and protein, so a good meal for the old health too. There are also extra points as this is one of the easiest vegan recipes out there!
1 pound of red kidney beans
1 diced up green capsicum
1 diced up yellow onion
2 diced celery stalks
2 tablespoons parsley (ideally fresh and chopped)
6 minced small cloves of garlic
1 teaspoon dried thyme
1 teaspoon paprika
1/2 teaspoon salt (or more to your taste)
1/4 teaspoon pepper (or more to your taste)
1 tablespoon (your choice of) hot sauce
1/8 teaspoon cayenne pepper (or more to your taste)
2 fresh bay leaves
32 ounces of vegetable broth
1-2 cups of brown rice
Drain the kidney beans ready for later. Then in a pot over medium heat, add the onion, capsicum and celery, and cook for about 8 minutes until lightly browned. Add your garlic and let it cook through for a minute or two.
Add your parsley, sauce, and herbs and stir through evenly to make sure you coat the vegetables in the spices and cook for another minute. Add the kidney beans, bay leaves and pour in your vegetable broth. Bring it to the boil and cover. You want to leave this on a lower heat and allow it to slowly simmer for about an 1 hour and 15 minutes to let those spices cook in; and then let it simmer uncovered for 15 minutes after that.
Prepare rice (we assume you know how to do this) and serve beans with any garnish (like parsley). Enjoy!
