A special vegan recipe: deluxe vegan Stroganoff
If you are looking for a hearty dish that is full of goodness and vegan yums, then a Stoganoff is always a classic go to. One of Somos Veganos‘ favorite vegan recipes with mushrooms, this dish is a go to when all you want to do is curl up with a glass of red and a fire.
1 large onion
10 ounces of mushrooms (get creative with which you prefer)
4 cups pf pasta (can be made with your choice)
4 cups vegetable stock
2 tbsp yeast
1/4 teaspoon ground black pepper (or to taste)
1/3 cup cashew butter
1 tablespoon lemon juice (add a little zest if desired)
Salt to taste (1/4 teaspoon recommended)
Parsley or other leaf to garnish
Cut your onion into semi-rings. Cut your (cleaned) mushrooms into half or fourths as you prefer, but keep in mind that they will shrink down when cooking and are supposed to (so keep them large). Pour water into a pot on a medium heat and brown the onions.
Throw in your pasta along with the mushrooms, stock, yeast as well as the salt and pepper. Allow to simmer for 10 minutes making sure that you stir occasionally to avoid sticking.
With the heat off, stir in the lemon juice and cashew butter until it is well in there. Salt the pasta if needed and serve while warm and hearty. Great to add fresh bread to the side.
